I am putting together a buying plan for people on limited income with limited space to start a simple food storage program. I need some help. Average Concerned Mom :: Average Concerned Mom needs Nutrition Help If you are a nutritionist, a dietitian, or even just a good home shopper/economist, I’d really appreciate your comments, help and advice for this food box plan. It is for a 2-week box of “bare basics” food that would feed MY family of 4 (2 adults, 2 small kids) but could be adapted for any family or individual. You could put together 6 of these boxes for a 12-week supply of food.

I’ve priced the food as you can buy it in my regular grocery store (so it is probably overpriced) in regular sized containers (not bulk so they don’t require repackaging) and think the 2 weeks of food comes to about $100 to $120. (remember I have small kids) It would be much cheaper if you bought in bulk, but my thinking is, people (the friends I am aiming this at) just starting out will be put off by the need to buy in bulk and repackage, and I want to just get them started.

All the food can be prepared using a pot of boiling water and a frying pan, and I have plans to include simple recipes (tortillas, pancakes, grain stews,how to cook beans from scratch).

The 2-week supply of food fits into about a 66-galln rubbermade type container. I think it might be a good starter food-storage plan for apartment dwellers, because I chose the most compact, nutrient-dense foods I could think of.

I am running into some problems with the nutritional analysis. The food I listed gives enough enough calories for my family, but more protein and fiber than we need. I want to trim it down to be cheaper and more compact. But I can’t reduce protein without reducing calories.

Unless I take out some rice and beans and throw in some chocolate!
