Forum: Average Concerned Mom Needs Nutritional Help

I am putting together a buying plan for people on limited income with limited space to start a simple food storage program. I need some help.

If you are a nutritionist, a dietitian, or even just a good home shopper/economist, I’d really appreciate your comments, help and advice for this food box plan. When it is done, I’d be glad to post it to the wiki. Please email me at averageconcernedmom at hotmail dot com if you would be willing to review my food plan.

It is for a 2-week box of “bare basics” food that would feed MY family of 4 (2 adults, 2 small kids) but could be adapted for any family or individual. You could put together 6 of these boxes for a 12-week supply of food.

I’ve priced the food as you can buy it in my regular grocery store (so it is probably overpriced) in regular sized containers (not bulk so they don’t require repackaging) and think the 2 weeks of food comes to about $100 to $120. (remember I have small kids) It would be much cheaper if you bought in bulk, but my thinking is, people (the friends I am aiming this at) just starting out will be put off by the need to buy in bulk and repackage, and I want to just get them started.

All the food can be prepared using a pot of boiling water and a frying pan, and I have plans to include simple recipes (tortillas, pancakes, grain stews,how to cook beans from scratch).

The 2-week supply of food fits into about a 66-galln rubbermade type container. I think it might be a good starter food-storage plan for apartment dwellers, because I chose the most compact, nutrient-dense foods I could think of.

I am running into some problems with the nutritional analysis. The food I listed gives enough enough calories for my family, but more protein and fiber than we need. I want to trim it down to be cheaper and more compact. But I can’t reduce protein without reducing calories.

Unless I take out some rice and beans and throw in some chocolate!

Anyhow, if you would be willing to take a look and tell me what you think, I’d love it!

Ive been working at this myself and would LOVE to review your plan-am sending e-mail.

I’m working on a vegatarian plan which would probably reduce the protein but might add to the fiber. Also, I’m planning for teens so protein is a concern.

We have a nice discussion over there going on about it; I’m getting some good advice but could always use more. Apparently I have not included enough chocolate!

And just a plug for the new forum. I really REALLY hated it at first. I have enough going on in my life and didn’t need the added hassle of learning yet another new thing. Also, it seemed really cluttered, and I didn’t like this and that…. but out of respect for DemFromCT and everyone, I didn’t say anything.

Anyhow, I did give it an honest try. I figured, 2 hours would be my limit. And about the third time I was on it, it all started looking better — kind of like when you get new glasses, you might be dizzy at first; but then you readjust and reorient yourself? I think it is like that.

I am starting to like it a whole bunch more now, and it gets better the more I post on it. I urge you to at least give it 2 hours (if you haven’t already) before giving up on it because it is too cluttered or complicated. ‘nuff said.

Planning a diet is complicated if you want to use up what you buy in case pandemic flu does not occur before the sell-by dates on the food. Rice and wheat flour are cheap but unless put into vacuum-sealed bags will not last for more than several months. Oats and beans last a long time without that. (A good vacuum sealer is about $100 and the bags are not cheap, but can be re-used.) Pasta lasts several years, as will jars of pasta sauce. Peanut butter is an excellent source of calories and proteins. Containers of soya or canola oil are calorie dense and last for years and can be substituted for butter if you bake bread. Freeze dried veggies and fruits and soya/meats can be bought at Emergency Essentials (www.beprepared.com) but most people do not normally use these. The reconstituted veggies and soya/meats are easy to add to soups and rice toppings. Canned meats also are not too expensive if on sale and can last a long time. Be sure to see if the kids will eat what you store. Try making granola if you have the vacuum sealer. And buy some powdered milk - mxing it with regular if no panflu helps. Multivitamins are not a bad idea either. Expiration dates tend to be conservative and going over (if no sign of can swelling) will probably affect taste more than safety.
