I’m just getting back onto the ‘puter after several days away … however, when I’m looking specifically for red beans, I look in the Hispanic section of the grocery aisles. They can also be called “pink” beans.
Thanks for posting that first black bean & rice recipe — sounds like it’s pretty authentic. I haven’t been pleased with the store bought stuff I’ve purchased so I’m going to try this — and make the tortillas from that posted recipe too. I forgot who posted those, but THANKS for doing so!

Thank you. I’ve tried that, but the bags are very small. Any idea where 25, 50, or 100# bags can be purchased?
This is not, strictly speaking, prep food because it calls for fresh sliced peppers, celery and onions, but it is phenomenal!
Jamacian Black Beans
Simmer together, covered, about 30–40 min:
2 c softened black beans (about 1 c dry, soaked)
2 c water
2 tsp ham boullion
2 T lime juice
1 T molasses
2 T brown sugar
Add 2 (15 oz) cans of chili-ready tomatoes
3 stalks celery, sliced
1 large onion, sliced
2 red bell peppers, sliced
1 can plus juice crushed pineapple
1 cup frozen or canned corn
2 cups minute brown rice
1 tsp ground ginger
1/2 tsp ground cloves
1/4 tsp cayenne pepper or to taste
Simmer until vegetables are tender and rice has mostly absorbed the liquids. This makes a LOT and would serve 6–8 easily. It’s a good, balanced vegetarian meal with the grains and beans, but adding shrimp or ham would be really tasty, too.
Make that “Jamaican”.
I am also looking for a bulk source for PINK beans. Contrary to another poster; pink beans are not the same as the red beans. Pink beans are more of a Mexican bean, sometimes found in the USA in the Mexican groceries. They are more of a “delicate” tasting bean then others.
There is a “pink” kidney bean … some times called a “light red” kidney. That’s primarily what is used around here by the Mexican immigrants to make their refried beans. They also use black beans quite a bit for this.
You might find a source here though I don’t have any personal experience with them.
